Green Beans with Sweet Red Bell Peppers
June is green bean season. Maybe you call them string beans, or snap beans
or pole beans; you will find the best fresh green beans in early summer.
Visit the farmers market and buy some.
1½ pounds fresh green beans, trimmed
a cup diced sweet red pepper
4½ teaspoons olive or canola oil
4½ teaspoons water
1½ teaspoons white wine vinegar or cider vinegar
1½ teaspoon spicy brown mustard
¾ teaspoon salt
¼ teaspoon pepper
1/8 teaspoon garlic powder
Place beans and red pepper in a basket over 1 inch of boiling water in a saucepan.
Cover and steam for 7–8 minutes or until crisp-tender.
Meanwhile, in a bowl, whisk together the remaining ingredients for the vinaigrette.
Transfer bean mixture to a serving bowl; add vinaigrette and toss to coat. Yield: 9 servings.
