Green Beans with Sweet Red Bell Peppers

June is green bean season. Maybe you call them string beans, or snap beans or pole beans; you will find the best fresh green beans in early summer. Visit the farmers market and buy some.

1½ pounds fresh green beans, trimmed
a cup diced sweet red pepper
4½ teaspoons olive or canola oil
4½ teaspoons water
1½ teaspoons white wine vinegar or cider vinegar
1½ teaspoon spicy brown mustard
¾ teaspoon salt
¼ teaspoon pepper
1/8 teaspoon garlic powder

Place beans and red pepper in a basket over 1 inch of boiling water in a saucepan. Cover and steam for 7–8 minutes or until crisp-tender.

Meanwhile, in a bowl, whisk together the remaining ingredients for the vinaigrette. Transfer bean mixture to a serving bowl; add vinaigrette and toss to coat. Yield: 9 servings.

Nutrition information: One serving (1/2 cup) equals 43 calories, 2 g fat (trace saturated fat), 0 cholesterol, 207 mg sodium, 5 g carbohydrate, 3 g fiber, 1 g protein.

Cooking Tips

  • Peppers with three bumps on the bottom are sweeter and better for eating.
  • Peppers with four bumps on the bottom are firmer and better for cooking.
  • Easy Deviled Eggs—Cut eggs in half. Slip out yolks and put in a zip lock bag. Seal bag and mash well. Add remainder of ingredients, reseal, keep mashing until thoroughly mixed, cut a small tip off a corner of the baggy; squeeze mixture into egg. Throw bag away when done for easy clean up.
